I made it through another holiday

Well, Christmas and Michael's birthday have passed and I survived. Boy, last week was crazy!!! We went to McCovey's in Walnut Creek for Michael's 10th birthday. The boys had a great time. If you haven't been to McCovey's yet, you have to go.

My EGGLESS cupcakes

The Recipe~ 1 box Chocolate Cake Mix, 1-3oz box of Chocolate pudding, 1/2 Cups of crushed Oreo cookies. I followed the recipe on the box but forgot the eggs. These cupcakes tasted so GOOD!!!! I made them to sell at a bake sale but they never made it to the SALE. I can't wait to make these again.

Marshmallow Pops

I usually make S'more and Rocky Road Pops, but when I saw Bakerella's Cupcake pops I decided to give my MARSHMALLOWS dip into Royal icing and see if they looked anything like Bakerella's cupcake pops. They are really really simple, and you know I keep it simple. I used royal icing because I had some extra icing I wanted to get rid of. My boys loved them.

Billy's Vanilla Vanilla

I've been very interested in the recipe for some time now and I finally got to make it today! I've read some reviews mostly good but some negative ones as well. The not so good ones were mostly about the cupcakes being dry and some were reviewed that the centers in the cupcakes were sunken.

I followed the recipe and was very pleased with the results. I can't imagine them being dry with 2 sticks of butter. MOVE OVER PAULA DEEN! The only thing I can think of that would have caused the sunken centers is overfilling the liners. Or maybe a little tap of the oven caused them to fall.

Overall this was a yummy and easy recipe! BUT I'm interested what would happen if you substituted regular flour for cake flour??
